Today I am reminded why I like to cook for myself and why I have so many limes!

Black bean enchiladas and limeade
Cup of black beans (duh)
Half an orange (I don’t know life is sweet)
Half an onion (sometimes life stinks)
2-3 cups of water (add more if needed)
SALT (to taste)
Combine and cook in pot for 30 minutes then TAKE OUT the orange and onion
COOK beans until soft
*OR you can just skip all this and get canned beans but what fun is that :D
ugh, really I have to type all this out :P
1/4 Teaspoon Garlic Powder
1/4 Teaspoon Onion Salt
1/4 Teaspoon Ground Cumin
1/4 Cup of Chili Powder (sorry Jon)
1/4 Cup of Oil (i use avocado or olive)
2 Tablespoon Self-rising Flour (or regular flour with 1/4 Teaspoon salt and baking powder)
1 1/2 Cups of water
Heat pan on medium heat add oil, flour and chili powder
Mix together till its brown don’t burn!
Add tomato sauce a little at a time (8oz)
Then add onion salt, ground cumin, and chili powder.
Let it cook for 10 minutes and it’s done!
*AGAIN Or you can skip all this and get can enchilada sauce, now that's just mean :O
Mix the beans, sauce, and cheese (shredded choice)
And layer the tortilla with the bean filling, cook it in a preheated to 350-degree oven and you’re done!!
