Tamara makes Šopska Salata.
* 2 large tomatoes
* 1 green, yellow or red peppers
* 1 onion
* 1 cucumber
* small peace of feta cheese or hard sheep cheese that is similar to feta but much more saltier and harder
* 2 tablespoons of olive oil
* 1 table spoon of red vine vinegar
* little bit of salt
Wash and dice your vegetables to equal sizes.
When I dice my vegetables, I dice tomatoes last, because they get very soggy if left too long before eating. Mix them all together in a bowl.
To make the dressing, mix the olive oil, red wine vinegar and a little bit of salt.
Once it is all incorporated, pour it over the diced vegetables and mix well.
Now use a grater and grate the feta cheese on top of the salad and your salad is ready to eat.
If the feta cheese is too soft to be grated, you can simply place it in a freezer for about 10-20 minutes and then you will have no problem grating it.
This salad in my country, is usually eaten with grilled meat, but it can make a perfect lunch on it’s own.
This is perfect for vegetarians, but if you are vegan, you can substitute cheese with nuts or tofu.
